Mmmm, I made up my own somewhat healthy nachos at the ballpark. They already had BBQ chicken nachos on the menu last year. I had asked early in the season what was in it and how it was made. They had never actually made an order, so the person working that day had no idea and asked me how I wanted it made. Later I found out that it was basically the regular nachos only with pulled chicken added. But I had already made up my mind how I wanted my BBQ nachos, and now when I come to the window they say "the usual order?"

Here is the way I have it done: start with, of course, nacho chips. Next comes lettuce, then pulled chicken, onion, nacho cheese, sour cream, and then I add Sweet Baby Rays BBQ sauce on top. Hmm, I think I know what ballpark food I am going to have on Thursday--oh wait, that will have to be Friday. Hot dogs are 2 for $2 on Thursday. Gotta save a buck when I can.

You goobers made me hungry. Thought I'd start dinner. Discover Lisa must have thrown out my seaweed. Not California Rolls tonight., However, the Tri Tip designated for tomorrow night has been marinating since this AM.

It is now on the grill. 35 minutes from now will be a beef fest.

My version of poor mans pizza--I will go to the meat dept of my local store and they have the thawed cheap looking Mama Rosa (or something like that--anyway it is two very large pizzas for about $5) pizzas that basically have pepperoni on them and a little bit of cheese. I will then buy an onion, a pepper, a small package of diced ham (extra can be used for omelets later when eggs gives me $.10 off gas), and a package of shredded cheese. I cut up the onion and green pepper and sautee those adding it with some of the ham and plenty of extra cheese. This will usually last me 2-3 meals, and I still have another pizza thrown in the freezer for future use. Not a bad value. Throw in some of that packaged salad and it is a relatively easy meal.

I left the peppers off this one:

Nice. Usually, if i have a totinos in the freezer, i'll do the same.

However, in the past, when intoxicated, i've been known to make a "Taco Totinos" which .. ugh, i shouldn't tell anyone outside of my house this ..

but i nuke it and just wrap it up like a taco ... it's a greasy affair. Who knows what it tastes like .... :)

    Checking temp (want 130):

Ready to get in the foil and rest (skipping this step creates dry beef. The resting allows the juices to move back into the meat. If you slice it immediately it will be very very dry):

Now I would say Judy doesn't allow that very often. We at least eat a counter in matching chairs with real silverware and plates and glasses most of the time. Of course being at the ball park most nights cancels that out.

They were egg battered, and in a lemon/garlic sauce.
Served with pureed carrots and mashed potatoes.

(I didn't choose the "Italian" prep - which was to have them Fra Diavalo and over cappellini.)

It's never an issue of me "allowing" any of Charlie's behavior!! I'm not his mother......

Besides, after 20+ years of "proper family dinners" at table, it doesn't hurt my feelings at all to skip that work! I prepare a fairly well-balanced meal most every night; it's arranged on the stove/counter and whoever is home can fix their own plate (paper or real is a personal choice) - cafeteria style!! Occassionally he and I end up sitting side-by-side on the floor at the coffee table - this usually indicates a special occassion requiring the use of knife and fork....... and they say we ain't got no manners!!!

Sounds good but the Italian style would be a bit more my choice. Love the red pepper in that stuff!

Ya know it was mentioned, semi-jokingly, in a past thread but I do think it's officially time for a separate MTS - Food Forum. Can we huh? Pleez, pleez, pretty pleez.

Corky could even have his own special thread - "Cookin' with Corky" or maybe "A Man and His Meat" (just be careful with the pictures you post!)
