Baby backs and salad. These are almost done. Rubbed with Slap Yo' Daddy Meat Rub and smoked with Pecan wood. Glazed half with Blues Hog Tennessee Red sauce, the other half just got an apple juice spritz for the kids and Lisa.

Team Mom bought chicken breasts, tenders and legs for later today. I cleaned and marinated them and tonight my SIL decided, he wanted to cook. I didn't argue since I ran out of LP this evening (even though I have never enjoyed his grill cooking, I can always eat on the way home). Marinade was a simple chicken broth, poultry seasoning, onion, garlic, salt, pepper, paprika, cilantro, sage, celery seed and a hint of cinnamon.

Last night I threw together a Tuscan style pasta dish. Browned up some chunks of thick cut bacon, added some minced garlic, a bunch of halved cherry tomatoes, salt and pepper. Cooked till heated and the tomatoes started to pop, and added a can of canalinni beans. Cooked up some Dreamfields penne and added it to the pan, then splashed some white balsamic vinegar into the pan, added a big handful or two of rough chopped baby spinach and some chopped fresh basil. Finished with a little olive oil and Parmesan cheese. Very nice dish. wish I took a picture.

We all get into those ruts Sue. I've been doing alot of "mass" cooking lately (cooked a southern fried chicken dinner with red beans and rice, greens, and green beans for 40 last Friday, and BBQ'd 16 whole pork butts that made pulled pork for a church BBQ Saturday that served 200). Haven't felt much like cooking the last few weeks, but that kinda jumpstarted me.

Pot of marinara sauce on the stove to go with spaghetti and a few meatballs. Sauce has ground chuck and Jimmy dean sausage. Tried to find a local carry out for this and none close.

Red curry with chicken, pea pods, mushrooms, broccoli, and carrots(?). Good curry but the wontons with the sweet sauce combined with the spicy curry sauce were by far the best part of the meal.

Almost done! ABTs - all stuffed with my special cream cheese seasoning blend. 2 for Brooke with no meat. 4 with shrimp, wrapped in bacon. 4 with bacon inside and wrapped with bacon. Baby back ribs just got a glaze of Blues Hog Tennessee Red, chickens down below getting basted by the ribs, beans down there too. Chicken has Oak Ridge Secret Weapon Pork and Chicken rub.

I made a pizza last night - found a local place that makes the pizza dough (I hate making it at home), so all I had to do was pull it and roll it out.
I topped it with some marinara sauce, thinly slice zucchini and plum tomatoes (used my mandolin slicer), fresh basil, and shredded mozzarella and grated cheese.
It came out perfect... much better than my first attempt a few weeks ago, where the dough wasn't thin enough.Of all the things in life I've lost, I miss my mind the most.

Saw an ad for a product called "Flamedisk" which can be used in place of charcoal or even in a gas grill. Uses ethanol much like a giant thin can of sterno. I can't imagine using it under any fatty foods like steak or burgers.
