Thread: What's for dinner?

It did sound good. It didn't live up to the hype at ALL IMO. There were 3 of us for dinner. I was the only one to finish my one cocktail and I didn't really want anything to do with another one. VERY disappointing.
Here's the recipe:
Cool As A Cucumber Cocktail | Drink of the Week
It just had WAY too much cilantro, and not enough cucumber flavor. And this is coming from somebody who LOVES cilantro...it's one of my favorite flavors. It also wasn't sweet enough, IMO.
I made a double batch of the syrup thinking it sounded so good, but I ended up throwing most of it out. It just wasn't very good. Very disappointing.

bummer. Those are flavors I like also. You'd think that drink would be great.... oh well, you'll have to get back to the drawingboard.
Let me know when you hit the mark, hamm.Of all the things in life I've lost, I miss my mind the most.

When I was making it I thought like it sounded like a lot of cilantro, but I wanted to follow the recipe to the letter for a first run. This is why I rarely actually DO follow a recipe exactly. I find that my instincts are usually better than whoever published a random recipe on the internet.
Actually now that I think about it I DID double the cucumber after tasting it and realizing it had almost no cucumber flavor through the cilantro. I think next time if I were making again I would double the cucumber, and halve the cilantro. Specifically I don't think I'd boil the water with the cilantro in it, instead just put the raw in with the cucumber.
If you try something and get a good result, let me know!

Opened a package of center cut pork chops and was shocked. I've bought thicker bacon. To late to do something different so, grabbed a can of green beans, added fresh onion and began cooking. I heated just enough olive oil to wet the pan and added onions and green peppers. I let the onions get warm and added a little butter to hurry the caramelization. Then the pork as I increased the heat; which I had sprinkled with soy, onion, mustard and ginger. Only about two minutes in the hot oil and they remained very tender. what I foresaw as a bust was quite good.

Last night was BBQ chicken thighs, rice pilaf, and green beans. Tonight will be pasta with "red gravy" and some crusty bread.

I baked flounder fillets, topped w/a little panko breadcrumbs that were mixed with dried dill, pepper, and garlic powder. Sprayed a little butter PAM on it.
Served w/macaroni salad, and a tomato/cucumber/red onion w/balsamic vinegar & EVOO.
(bonus: the flounder was on sale. It was very fresh and very good.)Of all the things in life I've lost, I miss my mind the most.

For us it was ballpark deep fried Mozzarella cheese sticks. Tonight it will be St. Louis style ribs smoked on the grill for a while, then wrapped in foil and put in a low heat oven for a few hours.

Here's a few pics of the brisket I smoked a feew weeks ago. I think Corky would have approved.
Just off the smoker. It cooked at 290* for almost 16 hours, lump and cherry wood chunks...

A few slices. Moist and tender. An amazing cut of beef...

I'm having a big lunch of bow-tie pasta, cheese, vegetables, and a mix of red and hot sauce, so I think dinner will be a cheese sandwich with lettuce and tomato that I pop into the toaster oven.
This spot, and a place in my heart, is reserved for TC.

Once I graduate in April and find a job a smoker is going to be one of my first purchases. Right now I'm just using one of the small, red, charcoal, water smokers.

It's just way too small and inconsistent with the smoke. It doesn't hold heat well either. In my mind, smoked food is the best food. You can't beat a pulled pork sandwich.

How is Corky missing out on all of this? This kind of talk is his forte.
Retired. Thanks for the entertainment.
